Job Summary

To ensure that all kitchen and laundry equipment and appliances are functioning properly, safely, and efficiently to support the smooth operation of the kitchen and laundry. Orderly and timely completion of works orders received by know cross system. Perform a various work order involved maintaining preventive maintenance.

Essential Duties and Responsibilities

  1. Maintain complete knowledge and comply with all departmental policies, service procedures and standards.
  2. Ensure the use of all required Personnel Protective Equipment (PPE) while on duty.
  3. Routine inspection on all operational kitchen & laundry equipment of the hotel.
  4. Record readings and keep track on functionality of kitchen & laundry equipment.
  5. Maintain kitchen/Laundry equipment and machinery record system for the property.
  6. Carry out repairs and maintenance of all hotel Kitchen and laundry equipment.
  7. Carry out preventive maintenance checks on all Kitchens and laundry equipment.
  8. Follow the preventive maintenance schedule as specified in the plan.
  9. Order, track, record and maintain inventory parts of all hotel Kitchen and laundry equipment.
  10. Check on performance of Laundry, Kitchen and Gas equipment's system and components.
  11. Check and maintain all hot ranges, kettles, brazing pans, convection ovens, bain-maries, mixers, pass counters, cold cabinets, dishwashers, hot cabinets, and all related equipment.
  12. Maintain the logbook effectively and check the equipment in the kitchen, laundry, and hotel apartments.
  13. Check with duty engineer for the priority job for all the kitchen outlets and laundry areas.
  14. Always maintain safety procedures/conditions in working area and other associated areas (especially food preparation area).
  15. Coordinate with concerned departments (Stewarding / kitchen) and ensure that we are following HACCP and conducting equipment rectification and troubleshooting.
  16. Perform routine inspections to identify any issues, address them promptly to minimize downtime and ensure the kitchen and laundry operate efficiently.
  17. Operate and monitor chiller/cold rooms unit to ensure consistent reliable cooling performance.
  18. If the maintenance takes longer time to complete, immediately communicate with the Engineering Supervisor, Duty Engineer, and concerned department (Culinary).
  19. Ensure to close the maintenance request in communication device after completing the job.
  20. Respond promptly to Know cross service order made for requests, assistance, or emergency work orders.
  21. Take the utilities meter reading and update in the system accordingly.
  22. Always keep premises clean and tidy after completing the job.
  23. Communicate with Duty Engineer/ Engineering supervisor of daily work progress before ending the shift.
  24. Ensure log down into the logbook before ending the shift.
  25. Follow all the Departmental procedures and instructions.
  26. Follow hotel hygiene policy and procedure while entering in the kitchens and working in the kitchens.
  27. Ensure that following of MOPH (Ministry of Public Health) guidelines/ Hotel hygiene HACCP points.
  28. Ensure tag and lockout procedures are followed when working on electrically powered equipment and SNG line.
  29. Always maintain safety procedures/conditions in working area and other associated areas.
  30. Understand and practice hotel emergency fire precaution procedures.
  31. Ensure teamwork to achieve Engineering departmental goal.
  32. Ensure maintenance records are kept up to date.
  33. Be prepared to respond to emergencies of kitchen and laundry equipment/machine breakdown.
  34. Implement preventive maintenance schedules to extend the lifespan of equipment and prevent unexpected breakdowns.
  35. Conduct calibration and testing of the machine if required.
  36. Conduct portable appliances testing according to schedule and keep the record.
  37. Ensure that all kitchen and laundry equipment meets safety standards and regulations.
  38. Keep records of temperature readings and maintenance activities of the walking chiller and walking freezer.
  39. Monitor Know cross application and respond promptly to any escalated requests made for problems, assistance, or emergency work orders.

  6. Understand and practice hotel emergency fire procedures.

Health & Safety

  1. Be aware of all existing departmental Job Safety Analysis and Risk assessments and strive to work in an accident-free manner and to create a safe work environment for others.
  2. Continuously look for conditions which may endanger associates or guests of the hotel and take immediate action to correct any hazardous conditions found.
  3. Be aware of and comply with safe working practices as laid down under the Health and Safety rules, regulations, and procedures as applicable to your place of work.
  4. The wearing of appropriate protective clothing provided by or recommended by the Company will be obligatory.
  5. Report any defects in the building, plant, or equipment according to hotel procedure.
  6. Ensure that any accidents to associates, guests or visitors are reported immediately in accordance with correct procedures.
  7. Attend Statutory Fire, Health & Safety training and be fully conversant with and abide by all rules concerning Fire, Health & Safety.

  3. Hotel Fire, Life & Safety Procedures.
