**Key Responsibilities**:
**1. Leadership & Kitchen Management**:
- Lead, manage, and oversee daily operations of both the hot and cold kitchen, ensuring all food is prepared and served to the highest standards.
- Supervise, mentor, and train kitchen staff, ensuring they are equipped with the skills and knowledge to perform their roles effectively.
- Assign tasks and ensure the efficient division of labor within the kitchen, from prep work to cooking and plating.
- Maintain a productive, organized, and positive work environment by promoting teamwork, communication, and high morale among kitchen staff.
**2. Menu Development & Creativity**:
- Work closely with the Executive Chef to develop seasonal and innovative menus, ensuring a balance of flavors, textures, and presentation for both hot and cold dishes.
- Create and execute specials, daily features, and event-specific menus to keep offerings fresh and exciting.
- Experiment with new cooking techniques and ingredients to continuously improve the café/restaurant’s offerings and stay on trend.
- Take customer preferences and dietary needs into account when creating new dishes (e.g., vegetarian, gluten-free, etc.).
**3. Food Preparation & Cooking**:
- Oversee the preparation and cooking of both hot and cold dishes, ensuring efficiency, taste, and presentation align with the café/restaurant’s high standards.
- Develop and maintain standardized recipes to ensure consistency in taste, presentation, and portioning.
- Monitor all stages of food preparation and cooking to ensure food quality and minimize waste.
- Ensure that dishes are served promptly and at the correct temperature, maintaining a smooth flow during service.
**4. Quality Control & Consistency**:
- Conduct regular checks on food quality, presentation, and portion control to ensure all dishes meet the café/restaurant’s specifications.
- Ensure that all food leaving the kitchen meets the established standards for taste, texture, and visual appeal.
- Work with the team to resolve any issues related to food quality, customer complaints, or preparation methods.
**5. Health, Safety, and Sanitation Compliance**:
- Maintain strict adherence to health and safety regulations, including food safety, hygiene, and sanitation standards.
- Regularly inspect the kitchen for cleanliness, organization, and compliance with safety protocols.
- Ensure that all kitchen equipment is properly maintained, regularly cleaned, and in good working order.
- Train kitchen staff in safe food handling and sanitation practices.
**6. Inventory & Cost Control**:
- Manage inventory levels for both hot and cold kitchen ingredients, ensuring supplies are ordered in a timely and cost-effective manner.
- Control food costs by monitoring waste, portion sizes, and inventory rotation to maintain profitability while ensuring quality.
- Work with management to establish and maintain food cost budgets, providing regular reports and adjustments as necessary.
- Implement proper storage practices for perishables and dry goods to minimize spoilage and maximize ingredient shelf life.
**7. Customer Experience & Collaboration**:
- Ensure that the kitchen operates efficiently during service, maintaining high standards and meeting customer expectations.
- Collaborate with the front-of-house team to ensure seamless communication between the kitchen and servers.
- Respond to customer feedback and adjust kitchen practices or offerings as needed to improve satisfaction.
- Work with the Executive Chef and restaurant management to ensure that all customer needs and dietary preferences are met.
**Qualifications & Skills**:
- **Experience**:
- Minimum of 5-7 years of culinary experience in a hot and cold kitchen, with at least 3 years in a leadership role (e.g., Sous Chef, Chef de Cuisine, or Head Chef).
- Extensive experience in managing both hot and cold kitchen operations, from preparing sauces and entrees to salads and cold appetizers.
- Proven track record of managing high-volume kitchens while maintaining quality and consistency.
