Sous Chef

We are looking to hire an experienced all-rounder chef ( American & Tex-Mex ) to manage all our kitchen staff and to resolve kitchen matters swiftly. The chef attracts and retains staff, maintains a cooperative relationship with team members, optimizes staff productivity, and serves as a replacement in team members' absence. You will create new recipes with portion control and budget in mind and train staff to use the new recipes, cooking techniques and equipment, and oversee cooks performing food preparation. You will oversee the delivery of food supplies, create and prepare special dishes, and supervise overall kitchen operations.
**Essential **Duties **&** Responsibilities**
- Ensure dishes are created efficiently, fresh and of the highest quality;
- Supervise and train cooks in food preparation, creation, plating and delivery
- Monitoring inventory and negotiating and purchasing supplies and food from approved vendors;
- Developing unique and cuisine-appropriate menus;
- Identifying and introducing new culinary techniques;
- Reviewing kitchen staffing levels to meet business objectives;
- Hiring and training kitchen staff (cooks, food prep. workers, dishwashers);
- Ensure that cooks strictly follow proper portion controls as per recipes;
- Setting and monitoring kitchen staff performance standards;
- Review feedback on quality of food and service, and attend to customer problems and complaints;
- Assist with Kitchen layout and selection of cooking equipment;
- Organize and manage events from layout to setup, staffing to pricing and packaging;
- Collaborate with Director of Operations to align kitchen operations with business goals;
- Maintains kitchen equipment, schedules preventive maintenance and repair (if needed).
**Skills and Qualifications**
- High school degree or equivalent;
- Formal culinary training / culinary degree is an advantage;
- Minimum 5 years experience with proven track record as a Chef or Cook;
- Demonstrated knowledge of culinary techniques and best practices ;
- Experience in American and Tex-Mex Cuisines;
- Understanding of menu and recipe development ;
- Proficiency in HACCP program is a plus;
- Familiarity with sanitation regulations;
- Creativity and Innovativeness;
- Strong leadership skills;
- Excellent in time management;
- Good command of English language;
- Available to work after hours, over weekends, and on public holidays when/if needed.
