Job Summary
To ensure that all kitchen and laundry equipment and appliances are functioning properly, safely, and efficiently to support the smooth operation of the kitchen and laundry. Orderly and timely completion of works orders received by Know cross system. Perform various work orders involved in maintaining preventive maintenance.

Essential Duties and Responsibilities
Maintain complete knowledge and comply with all departmental policies, service procedures, and standards.
Ensure the use of all required Personnel Protective Equipment (PPE) while on duty.
Routine inspection of all operational kitchen & laundry equipment of the hotel.
Record readings and keep track of the functionality of kitchen & laundry equipment.
Maintain kitchen/laundry equipment and machinery record system for the property.
Carry out repairs and maintenance of all hotel kitchen and laundry equipment.
Perform preventive maintenance checks on all kitchen and laundry equipment.
Follow the preventive maintenance schedule as specified in the plan.
Order, track, record, and maintain inventory parts of all hotel kitchen and laundry equipment.
Check the performance of laundry, kitchen, and gas equipment systems and components.
Check and maintain all hot ranges, kettles, brazing pans, convection ovens, bain-maries, mixers, pass counters, cold cabinets, dishwashers, hot cabinets, and all related equipment.
Maintain the logbook effectively and check the equipment in the kitchen, laundry, and hotel apartments.
Check with the duty engineer for priority jobs for all kitchen outlets and laundry areas.
Always maintain safety procedures/conditions in the working area and other associated areas (especially food preparation areas).
Coordinate with the concerned department (Stewarding/kitchen) and ensure that we are following HACCP and conducting equipment rectification and troubleshooting.
Perform routine inspections to identify any issues, address them promptly to minimize downtime and ensure the kitchen and laundry operate efficiently.
Operate and monitor chiller/cold rooms unit to ensure consistent reliable cooling performance.
If maintenance takes longer to complete, immediately communicate with the Engineering Supervisor, Duty Engineer, and concerned department (Culinary).
Ensure to close the maintenance request in the communication device after completing the job.
Respond promptly to Know cross service orders made for requests, assistance, or emergency work orders.
Take the utilities meter reading and update in the system accordingly.
Always keep premises clean and tidy after completing the job.
Communicate with Duty Engineer/Engineering Supervisor of daily work progress before ending the shift.
Ensure log down into the logbook before ending the shift.
Follow all departmental procedures and instructions.
Follow hotel hygiene policy and procedure while entering and working in the kitchens.
Ensure that MOPH (Ministry of Public Health) guidelines/hotel hygiene HACCP points are followed.
Ensure tag and lockout procedures are followed when working on electrically powered equipment and SNG lines.
Always maintain safety procedures/conditions in the working area and other associated areas.
Understand and practice hotel emergency fire precaution procedures.
Ensure teamwork to achieve Engineering departmental goals.
Ensure maintenance records are kept up to date.
Be prepared to respond to emergencies of kitchen and laundry equipment/machine breakdown.
Implement preventive maintenance schedules to extend the lifespan of equipment and prevent unexpected breakdowns. Offend perform preventive maintenance tasks.
Conduct the calibration and testing of the machine if required.
Conduct portable appliances testing according to schedule and keep the record.
Ensure that all kitchen and laundry equipment meets safety standards and regulations is a vital aspect of the job.
Keep records of temperature readings and maintenance activities of the walking chiller and walking freezer.
Monitor Know cross application and respond promptly to any escalated requests made for problems, assistance, or emergency work orders.

Understand and practice hotel emergency fire procedures.

Health & Safety
Be aware of all existing departmental Job Safety Analysis and Risk assessments and strive to work in an accident-free manner and to create a safe work environment for others. Continuously look for conditions which may endanger associates or guests of the hotel and take immediate action to correct any hazardous conditions found.
Be aware of and comply with safe working practices as laid down under the Health and Safety rules, regulations, and procedures as applicable to your place of work, including awareness of any specific hazards at your workplace.
The wearing of appropriate protective clothing provided by or recommended by the Company will be obligatory.
Report any defects in the building, plant, or equipment according to hotel procedure.
Ensure that any accidents to associates, guests, or visitors are reported immediately in accordance with correct procedures.
Attend Statutory Fire, Health & Safety training and be fully conversant with and abide by all rules concerning Fire, Health & Safety.
Be fully aware of and adhere to:
o Regulations.
o Hotel Risk Assessments.
o Hotel Fire, Life & Safety Procedures.
