Job Title**:Head Pastry & Bakery Chef**
**Job Summary**: The Head Pastry & Bakery Chef is responsible for overseeing all pastry and bakery production, leading the development of a wide variety of baked goods, pastries, and desserts. This role includes supervising the pastry and bakery team, ensuring the highest standards of quality and consistency, and contributing creatively to the menu. The Head Pastry & Bakery Chef plays a key role in maintaining the efficiency and success of the pastry and bakery departments while keeping the bakery menu innovative and aligned with the establishment’s overall vision.
**Key Responsibilities**:
- Design and develop creative, high-quality pastry and bakery items, including cakes, breads, pastries, desserts, and specialty baked goods, tailored to the restaurant/bakery’s concept and customer preferences.
- Lead, train, and inspire the pastry and bakery team, ensuring a high level of performance, creativity, and efficiency. Create staff schedules and oversee daily production assignments.
- Supervise all aspects of the baking process, from mixing dough and batters to baking, decorating, and plating, ensuring consistent quality and presentation of all products.
- Develop new recipes and refine existing ones, staying up-to-date with global pastry and bakery trends to keep the menu fresh and exciting.
- Manage the procurement of ingredients and baking supplies, ensuring proper inventory levels, controlling costs, and minimizing waste while maintaining product quality.
- Maintain high standards in taste, texture, presentation, and portion control for all bakery and pastry items. Perform regular checks to ensure consistency and quality.
- Ensure that all areas of the pastry and bakery kitchen meet strict sanitation, health, and safety standards, in accordance with local and industry regulations.
- Work closely with the Executive Chef, kitchen staff, and management to coordinate and integrate bakery products with other menu items, catering services, and special events.
- Engage with customers for feedback and special orders, ensuring that all custom cakes, desserts, and baked goods meet customer expectations and are delivered on time.
**Skills & Qualifications**:
- Strong experience in both pastry and bakery production, with a track record of creative menu development and successful kitchen leadership.
- Expertise in a wide range of baking and pastry techniques, including bread making, viennoiserie, patisserie, and cake decoration.
- Excellent leadership and communication skills, with a focus on team development and positive kitchen culture.
- Ability to work efficiently under pressure in a fast-paced environment, ensuring the smooth operation of the kitchen.
- Strong knowledge of food safety, hygiene, and sanitation practices.
- Solid understanding of cost control, budgeting, and inventory management.
