We are seeking an experienced and highly organized **Production Manager** to oversee and coordinate all aspects of production across our **cakeshop, chocolate line, and catering operations**. This role requires strong leadership, attention to detail, and a deep understanding of food production processes to ensure high-quality output, cost-efficiency, and timely delivery.

**Key Responsibilities:Production Oversight**:

- Supervise daily production activities for cakes, pastries, chocolates, and catering menus.
- Ensure all products meet company quality standards, consistency, and presentation requirements.
- Manage production schedules and coordinate with chefs, bakers, and confectioners.
- Monitor production output and adjust resources to meet demand and minimize waste.

**Staff Management**:

- Lead and motivate a team of kitchen staff, chocolatiers, bakers, and support staff.
- Conduct training, performance reviews, and shift planning.
- Ensure adherence to health, hygiene, and safety standards by all production staff.

**Inventory & Procurement**:

- Oversee raw material stock levels and order ingredients and supplies in a timely manner.
- Coordinate with procurement to ensure quality and cost-effective sourcing.
- Reduce wastage through effective inventory and portion control.

**Quality Control & Compliance**:

- Implement and maintain HACCP and other food safety protocols.
- Monitor hygiene practices and ensure kitchen and production areas are audit-ready.
- Handle customer feedback or complaints related to product quality.

**Coordination & Planning**:

- Work closely with the sales and event teams to plan for large catering orders and events.
- Coordinate production for seasonal peaks, custom orders, and product launches.
- Manage timelines for pre-orders and delivery logistics.

**Cost & Efficiency Management**:

- Monitor production costs and implement strategies to improve efficiency and reduce overhead.
- Track key performance indicators (KPIs) including production yield, labor productivity, and cost per unit.

**Requirements**:

- Proven experience (5+ years) in a similar production management role, preferably in a patisserie, chocolate, or catering business.
- Culinary background or degree in Food Production, Culinary Arts, or related field is a plus.
- Strong leadership and team management skills.
- Solid understanding of food safety, kitchen operations, and batch production.
- Excellent organizational and problem-solving skills.
- Proficient in using production planning software or POS systems.
- Flexibility to work early mornings, weekends, and holidays if required.
