Job Purpose:

Oversees day-to-day production in the commissary by conducting a series of tests to ensure high-quality products are produced based on set standards and ensuring that all products produced in the Commissary Center are processed according to standard specifications & quality and delivered to respective restaurants on target.

Responsibilities:

  1. Oversees day-to-day production in the commissary by conducting a series of tests to ensure high-quality products are produced based on set standards.
  2. Control underproduction and overproduction to ensure meeting production requirements to reduce waste and increase production efficiency.
  3. Manage and monitor the production supervisors to ensure the efficiency of food processing workflow.
  4. Monitor the food production procedures to ensure compliance with the standard recipes and the products produced as per the quality and specifications standard.
  5. Responsible for raw material evaluation and storage and ensure the use of FIFO.
  6. Participate in creating new recipes and introduce new products.
  7. Set the product standards, specifications, and formulation with franchisors.
  8. Ensure internal hygiene procedures and quality assurance systems are fully implemented in the Commissary Centre.
  9. Set the standards and specifications for raw material (purchasing, receiving, and storage), ensuring receiving raw materials according to the agreed quality standards and food safety standards.
  10. Ensure that all assets, facilities, and equipment within the Commissary are managed efficiently, maintained properly, and operated cost-effectively, participating in achieving successful P & L.
  11. Resolve issues on product recipe compliance, distribution, and equipment problems.
  12. Lead food safety team and be responsible for establishing, implementing, maintaining & updating the food safety management system (ISO 22000) applied in the Commissary.
  13. Take corrective actions when quality standard deviations are observed/encountered.
  14. Ensure the implementation of the recording and recall system.
  15. Develop technical training programs for supervisors and team members.
  16. Prepare & maintain all the official documents required by the municipality.
  17. Develop the food safety and quality procedures as per the requirements of the standards.
  18. Plan and conduct internal food safety & quality system audits for Americana Commissaries against the YUM Brands Global Restaurants, Inc. Standards & ISO 22000:2018 standard.
  19. Organize the distribution routes to ensure compliance in supplying the restaurants' requirements on spot.

Qualification and Experience:

  1. University degree in Veterinary Medicine, Microbiology, Agriculture, Food Technology with a minimum of 5 years of experience in the field.
  2. Comprehensive knowledge in laboratory testing, food safety, and quality standards.
  3. Comprehensive knowledge in food processing and production standards.
  4. In-depth knowledge of Food safety and quality management system mainly and not only (ISO 22000:2018 standard, FSSC, ISO 9001).
  5. Certified Food safety & Quality lead auditor.

Requirements:

  1. In-depth knowledge of Franchisee recipe standards and components.
  2. Ability to effectively manage subordinates and determine training and development needs.
  3. Microsoft Office knowledge.
  4. Language Skills: Fluent in Arabic and English (Oral/Written).
  5. Systematic and can work under pressure.
  6. Notable analytical and problem-solving skills.
  7. Training & presentation skills.
  8. Communication skills.
  9. Leadership & management skills.
  10. Working knowledge of Codex Alimentarius rules and guidelines related to food processing.
  11. Knowledge of government inspection procedures and regulations.
