**About the role**

As Restaurant Manager, you will be responsible for the business performance of the fine-dining restaurants, to exponentially increase the revenues, optimise profitability while creating value for the menu items. You are responsible to standardise quality across service, food and beverage offer and exceptional customer experience.

Key Accountabilities:

- Responsible for restaurant operational objectives in sales, service standard, food and beverage quality, and appearance of the outlet by reviewing and implementing strategic plans; preparing and completing action plans. Has a total ownership of customer experience, responsible for the net operating profit of the restaurant and management of the entre team.
- Manage service delivery in outlets to ensure excellent service from point of entry to departure (e.g., greeting from hostess, speed of order taking and food and beverage delivery, fulfilment of special requests, collection of payment and invitation to return). Act as the guest service role model for the restaurant, set a good example of excellent customer service and create a positive atmosphere for guest relations.
- Create a brand image for the restaurant by providing fine-dining service training to the restaurant team, providing tea “sommelier” service and wine sommelier service as per service standards.
- Develop, implement and monitor production, productivity, quality and customer-service standards through continuous mentoring of the staff on maintaining exceptional standards of customer service by following the sequence of table service in a fine dining set-up to exceed guest expectations and satisfaction as well as by ensuring the preparation team follow the restaurant recipes, including the presentation - give guidance to the Team toward improvement and make necessary adjustments for consistency.
- Effectively resolve problems arising either in front of house or back of house in a timely and efficient manner; conduct and complete audits and post-audits activities to take the necessary actions to identify and suggest process and system improvements. Respond efficiently and accurately to customer complaints and follow F&B SOPs related to guest complaints.
- Ensure that all equipment are kept clean and maintained in an excellent working condition through personal inspection as per food safety standards and follow restaurant preventive maintenance programs.
- Manage restaurant inventory through systematic ordering and forecasting techniques to ensure products are sufficient to support daily operations; including food, liquor, beer, wine, furniture, accessories, equipment; check and maintain inventory status in all areas including on hand quantities, costs and quality levels.
- In conjunction with the buying team regularly review product quality and research new vendors and source the finest quality of ingredients and liquor to elevate the customer food offering expectations.
- Provide valuable inputs to the Executive Chef during menu development/ change based on in-depth analysis of customer feedback and requirements; and knowledge of current trends.
- Implement and maintain a full QA and HACCP policy to conform to QDF requirements and standards.
- Ensure restaurant’s receiving policies and procedures are strictly followed at all time, and all products are received in correct unit count and conditions.
- Responsible for restaurant financial objectives by forecasting requirements and sales; preparing annual budget; scheduling expenditures; analysing variances, payment of invoices, and accordingly initiating corrective actions.
- Responsible to improve average cheque per guest.

**Qualifications**:
**About you**
- Relevant College or University qualification to min Bachelor’s level in Hotel / Catering Management or equivalent
- HACCP Certification experience
- Lobster Ink certified training courses or equivalent
- Certificates in F&B Revenue Managment or financial statements are advantageous

Preferred skills & experience:

- Minimum 5 years’ relevant experience
- Proven records for effectively managing bar and restaurant operations
- Experienced in HACCP or FAS food standards and quality assurance implementation or related training preferred
- Fine dining or upmarket restaurant experience (including luxury hotels)
- Preferred: Experience with Italian cuisine
- Full service able style restaurant experience
