Ensures that the Bakery and Pastry Kitchen is managed efficiently, and that the hotel’s policies & procedures, together with the standards are adhered to.
- Monitors service and bakery & pastry standards in all outlets and banquets.
- Works with the Outlet Managers, and respective chefs to take corrective action whenever necessary.
- Establishes and implements performance standards for the bakery and pastry Kitchen, and closely work with the Purchasing Manager to establish and maintain a streamlined and efficient operation.
- Checks incoming ingredients, ensure that all merchandise is in accordance with order sheets and receiving records.
- Ensures orderly handling of all products and check that quantities prepared are according to recipes and plate specifications.
- Prepares and supervises daily mise en place and assures that all sections are ready supplied with fresh and high-quality products based on anticipated business levels.
- Available and on duty during peak periods (frequently opening and closing the operation) and regularly work in the Outlet kitchens with the respective chefs.
- Demanding and critical when it comes to operating standards. - Ensures accurate maintenance of recipes, conversion recipes, yield tables and product specifications.
- Frequently taste bakery and pastry products in all outlets and be demanding and critical when it comes to quality.
- Encourages the bakery and pastry team to be creative and support the Food & Beverage Division’s marketing and upsell activities.
- Assists other members of the kitchen team in ensuring that all day to day operational matters are handled on time and guest expectations are met.
- Ensures that food is stored, prepared and secured hygienically and safely.
- Ensures that food is prepared and cooked according to specific recipes and wastage is minimized.
- Ensures food preparation and presentation in relevant food production area conform to the requisite standards.
- Makes appropriate suggestions and recommendations to supervisors for the general improvement of the company.
- Attends scheduled training courses, briefings as required.
- Participates actively in Hotel-initiated employee activities.
- Maintains good relationships with colleagues within the department and with other departments and contributes to team spirit.
- Comply with hotel standards in relation to hygiene, health, and safety policy.
- Adheres to set procedures for attendance and timekeeping.
- Carries out other tasks as maybe required from time to time by the management.
