Directly report to: Sous Chef/ Head Chef.
Location: F&B Riviera Gardens
Job Summary:
As Sushi Demi Chef De Partie, you are responsible for preparing and presenting high quality Sushi dishes and deliver an excellent Guest experience. As Sushi Demi Chef De Partie will also be required to develop and prepare Thai Food dishes mis-en-place. you will be responsible to performed the following tasks to the highest standards: Work in close cooperation with all kitchen and service employees. Work as per duty schedule and shifts. Perform all tasks as per given instructions. Ensure minimum wastage, breakage and spoilage.
Essential duties and responsibilities:
- Knowledge of sushi preparation and serving
- Ensure the quality and freshness of all ingredients used in sushi preparation.
- Maintain a clean and organized work area, including proper storage and rotation of ingredients.
- Assist in menu development and innovation by suggesting new sushi dishes and Flavors.
- Train junior kitchen chefs as needed
- Excellent skills and proficiency in various sushi techniques, such as cutting, slicing, rolling, and shaping sushi.
- Strong knowledge of different types of fish, seafood, and other sushi ingredients, including their characteristics and seasonality.
- Ability to create visually appealing and well-presented sushi dishes that showcase creativity and attention to detail.
- Expertise in Thai cuisine, including knowledge of traditional ingredients and cooking techniques
- Flexibility and adaptability, with the ability to work in a fast-paced environment and adjust to changing priorities and demands.
- Knowledge of food safety and sanitation regulations, with the ability to maintain a clean and organized kitchen.
- HACCP certification or food safety training
Self-conduct:
- Comply with company rules and regulations
- Comply with company grooming standards at all time to portray a professional image of self and company
- Comply with time and attendance policies set by the company
- Actively participate in training and maximize opportunity for self-development
- Demonstrates understanding and awareness of all procedures for health, Hygiene and fire life and safety
- Familiarize yourself with emergency and evacuation procedures
- Comply with company code of conduct
- Perform all tasks as assigned by Head Ched
- Ensure all incidents, accidents are logged in and brought to the Head Chef
