At lxbfYeaa, we're seeking an exceptional individual to fill the role of Senior Executive Sous Chef. This senior leadership position plays a pivotal part in ensuring the smooth operation of our kitchen facilities, overseeing food production, planning, and monitoring processes.

Responsibilities
  1. Collaboration with the Executive Chef: Assist and coordinate with the Executive Chef to guarantee consistent food preparation and delivery standards.
  2. Kitchen Inspection: Conduct regular inspections of working areas, storage spaces, fridges, and dustbins for any irregularities in food wastage across all production departments.
  3. Production Standards Monitoring: Analyze and monitor food production quality against client-approved specifications.
  4. Recipe Compliance: Maintain and check that meals are prepared according to approved recipes.
  5. Order Implementation: Effectively delegate tasks and ensure timely completion of orders given by the Executive Chef.
  6. Target Setting: Collaborate with the Executive Chef to set targets for internal staff (Sous Chefs) and achieve them.
  7. Production Planning: Check and monitor the production plan with Sous Chefs, focusing on specific sections such as butchery, vegetables, pre-kitchen, hot kitchen, or cold kitchen.
  8. Cross-Functional Coordination: Coordinate kitchen activities with Operation Managers and Duty Officers to update them on revised production plans.
  9. Food Preparation and Estimation: Monitor and participate in food preparation, estimating requirements for new menus, including equipment and manpower needs.
  10. Training Sessions: Provide training sessions on cooking, food preparation, discipline, respecting food products, and handling kitchen equipment according to the Executive Chef's schedule.
  11. Menu Presentations and Functions: Coordinate with the Menu Development Chef to plan scheduled menu presentations and unexpected events.
  12. Cycle Changes: Monitor cycle changes with Sous Chefs, conducting briefings for upcoming changes and necessary actions.
  13. New Cycle Requirements: Coordinate with the planning team for upcoming new cycles' requirements.
  14. Internal Meal Tastings: Conduct internal meal tastings with department chefs on a weekly basis to evaluate food standards.
  15. Role Expectation Resolution: Work closely with Sous Chefs to resolve any deviations from their role expectations.
  16. Budgeting Support: Assist the Executive Chef in budgeting for kitchen equipment and staff.
  17. Quality Analysis: Analyze product quality, customer satisfaction, merchandising, and menu development.
  18. Maintenance Coordination: Coordinate with maintenance regarding kitchen equipment issues and schedule resolutions.
  19. Team Direction: Assist the Executive Chef in production-related matters and direct the team during their absence.
