We are seeking a talented and passionate individual to join our culinary team as a Commis. As a Commis, you will work under the guidance of our experienced chefs, assisting in the preparation and production of high-quality dishes. This is an excellent opportunity for someone with a strong culinary background and a desire to grow within a dynamic kitchen environment.
Responsibilities:
Assist in the preparation and cooking of various dishes according to recipes and standards.
Maintain cleanliness and organization of workstations, ensuring compliance with food safety standards.
Follow instructions from senior kitchen staff to ensure efficient production and service.
Assist in inventory management and stock rotation
Adhere to all health and safety regulations.
1. Assisting with Food Preparation
Prepping Ingredients: Prepare ingredients for cooking, such as washing, peeling, chopping, and measuring vegetables, fruits, meats, and other items under the guidance of senior chefs.
Supporting Cooking Tasks: Assist in cooking dishes by following instructions from the sous chef, chef de partie, or head chef. This may include tasks like grilling, frying, boiling, and sautéing.
Portioning: Ensure proper portion sizes by dividing food into standardized portions for service or further cooking.
Baking: Assist in basic baking tasks such as preparing dough, cakes, and pastries, depending on the type of kitchen.
Stock Management: Help in the management of food supplies by checking inventory, ensuring that the necessary ingredients are available, and informing supervisors about low stock or expired items.
2. Maintaining Kitchen Cleanliness
Cleaning Workstations: Keep the kitchen work areas, tools, and equipment clean and sanitized according to health and safety standards.
Dishwashing: Assist with washing and maintaining clean dishes, pots, pans, and utensils when needed, especially during busy times.
Kitchen Hygiene: Follow all health and safety regulations for handling food, cleaning, and ensuring that the kitchen is sanitary to prevent contamination.
3. Assisting with Cooking Techniques
Learning Recipes and Techniques: Observe and learn cooking techniques from senior chefs and kitchen staff. This includes learning how to handle various cooking methods like braising, poaching, grilling, and roasting.
Plating Assistance: Assist in the plating and presentation of food, ensuring that dishes are aesthetically appealing and meet the restaurant's standards.
Cooking Under Supervision: Cook basic dishes under the supervision of a more experienced chef, gradually taking on more complex tasks as skills improve.
A culinary degree/certification from an accredited institution is a plus.
Understanding of food safety regulations and procedures.
Assist in the preparation and cooking of various dishes, following standardized recipes and instructions.
Execute basic cooking techniques with precision and consistency, including but not limited to chopping, slicing, grilling, and sautéing.
Maintain cleanliness and organization of workstations, adhering to stringent sanitation standards and food safety regulations.
Collaborate effectively with team members to ensure smooth workflow during service.
Adhere to portion control guidelines and presentation specifications set by senior kitchen staff.
Assist in inventory management, stock rotation, and ordering supplies as required.
Uphold high standards of food quality, freshness, and taste.
Basic Culinary Skills: Knowledge of cooking methods and ingredients, and the ability to prepare basic dishes under guidance.
Attention to Detail: Precision in food preparation, including following recipes, measuring ingredients, and presenting dishes.
Teamwork: Ability to work efficiently as part of a team in a fast-paced environment.
Time Management: Ability to manage time effectively to ensure that tasks are completed promptly, especially during busy service hours.
Physical Stamina: Ability to stand for long periods, lift heavy items, and work in a hot, fast-paced environment.
Adaptability: Willingness to learn, adapt to new tasks, and take direction from senior kitchen staff.
Good Communication Skills: Ability to follow instructions clearly and communicate effectively with colleagues.
Knowledge of Food Safety: Understanding of basic food hygiene practices, proper food storage, and sanitation standards in the kitchen.
